A dish with infinite varieties, couscous goes well beyond the boundaries of North and West Africa and can be found in the farthest reaches of the planet. Globalized, ever-moving, and impossible to pin down, couscous nevertheless remains a homey dish that every family, everywhere, adapts to its taste.
